Victorinox 8" x 3" Chinese Cleaver, Curved Blade, Walnut Wood Handle 40090 Chinese cleavers may look similar to Western cleavers but they share more similarities with chef's knives. Their blades are wide like cleavers, but much thinner, making them better suited for chopping, slicing and mincing. Victorinox's 8" Chinese Cleaver (40090) has a round walnut handle to allow for a pivot point when making cutting strokes. The wide blade keeps the fingers well off the cutting surface and also serves as a scoop to transfer food to a wok.
